A Recipe From Sudan:

This recipe requires two days.

"Ful"
Spicy Main Dish Bean Dip from Sudan
Serves 2-4

Ingredients for Ful:
· 1 quart vegetable stock
· 1 medium onion, chopped
· 1 large leek, with 2 inches of green top, chopped
· 2 medium carrots, sliced

How to make Ful:
Day One:
Ingredients for Ful:
· 1 cup dried fava, kidney or pinto beans
· 4 cups water
· ½ teaspoon salt
Combine the ingredients above and soak overnight.

Day Two:
Ingredients for Ful:
· 2 teaspoons ground cumin
· ½ teaspoon salt
· 1 tablespoon tahini (sesame seed paste) or 2 tablespoons sesame oil

How to finish making Ful:
1) Cook the beans that you soaked overnight until they are warm.
2) Drain off most of the water except for ½ cup of water left in the pan with the beans.
3) Then stir in the ingredients from day two.
4) Remove from heat and add any combination or all of the following:
· 1-2 eggs, hard boiled and finely chopped
· ¼ c. feta cheese, crumbled
· 1 tomato, diced
· 3-4 Falafal balls, crumbled
· 1 medium onion, chopped
5) Stir lightly to mix.
6) Put warm bean mixture in serving dish.
7) Break off pieces of pita bread and dip into bean mixture, using bread as a utensil.
