"Bean, Tomato and Onion Dish "
Serves 6-8 people

Ingredients for Bean, Tomato, and Onion Dish:
· 2 cups canned black-eyed beans (any kind of beans can be substituted)
· 2 cups of lightly salted water
· 3-4 medium tomatoes
· 1 medium onion
· 2 teaspoons vegetable oil

How to make Bean, Tomato, and Onion Dish:
1) Wash 2 cups of beans.
2) In a medium saucepan, boil 2 cups lightly salted water, add beans and boil until soft.
3) Puree or chop tomatoes, set aside.
4) Peel and slice onion.
5) In a large frying pan, fry the onion lightly in vegetable oil until onion begins to brown at the edges.
6) Then add the prepared tomatoes.
7) Allow the onion and tomatoes to simmer for 10 to 15 minutes, then add pepper to taste.
8) While waiting for the onion and tomatoes to cook, pour most of the salted water off the beans except for two or three tablespoons.
9) Remove about one third of beans and mash. Return mashed beans to remaining cooked beans.
10) Pour the onion and tomato gravy over the beans.
11) Stir together to mix well and simmer for 5-10 minutes.
12) Serve over rice or with vegetables.
