A Recipe From Elsalvador:

Corn, rice, beans, and coffee are major crops in El Salvador. Since these are major crops in the country, people eat meals that consist of these major crops in most of their meals.

"Pupusas y Curtido de Repollo"
Pupusas and Chopped Cabbage in Vinegar from El Salvador
Serves 4-6 people

Day One:
Ingredients for Curtido de Repollo:
· 1 head of cabbage
· White vinegar (about 1 and 1/2 cups)
· 2 carrots
· 1 medium onion
· 1 teaspoon each salt, oregano and chili pepper to taste

How to make Curtido de Repollo:
1) Chop the cabbage, carrots and onions into small pieces.
2) Place this vegetable mixture in a large bowl and add vinegar and spices.
3) Push the cabbage under the vinegar using a spoon.
4) Allow mixture to sit at room temperature for 6 hours before serving.

Day Two
Ingredients for Pupusas:
· Masa (a finely-ground corn meal available at many specialty food stores)
· Soft white cheese, such as mozzarella
· Red or black beans (If canned, follow directions on can. If in a bag, soak and cook as directions on bag read.)
· Tabasco sauce (optional)

How to make Pupusas:
1) Follow instructions on the package for cooking the beans, start simmering them in small pot.
2) Make thin tortilla dough by mixing the masa with water. Make thin tortillas, each about five inches in diameter and 1/8 inch thick.
3) Place the cheese and beans in the center of one tortilla and place the other on top, pressing the edges together to seal the filling inside.
4) In a frying pan, heat a tablespoon vegetable oil and place stuffed tortillas in pan. Cook evenly on both sides.
5) Remove pupusas from pan, sprinkle with two-three drops Tabasco sauce, spoon curtido de repollo on top. Serve immediately.
