"West African Groundnut Stew"
Serves 4 people

Ingredients for Groundnut Stew:
· 2 sweet potatoes
· 3 garlic cloves chopped or minced
· 3 tablespoons fresh grated ginger
· 2 tablespoons coriander
· ½ teaspoon cayenne pepper
· 1 medium onion, chopped
· 2 chopped tomatoes
· 4 cups chopped eggplant
· ½ cup of water
· 1 cup chopped zucchini
· 2 chopped green peppers
· 2 cups tomato juice
· ½ cup peanut butter

How to make West African Groundnut Stew:
1) Boil two sweet potatoes until they are tender, then set aside.
2) In a large pan, sauté the garlic and ginger in some oil with the coriander and cayenne pepper for one minute.
3) Then, add the chopped onion to the mixture. Sauté for a few minutes longer.
4) Add the tomatoes and eggplant with ½ cup water to the mixture and simmer for 10 minutes.
5) Add the zucchini and green peppers to the mixture and simmer for 20 minutes.
6) Drain the sweet potatoes, mash them up, and add to the stew.
7) Add 2 cups of tomato juice and ½ cup peanut butter to the stew.
8) Stir well for 5 to 10 minutes longer.
9) Serve hot over rice.
